(More customer reviews)I don't know about baking with this, but it's a great drink with stevia to sweeten it (natural, no calories). I dissolve a heaping tablespoon of the powder in half a cup of hot water then add half a cup of skim milk or unsweetened almond milk for a healthy delicious cup of hot chocolate (heat for 30 seconds in microwave after adding the cold milk). I suspect since it is organic, pure cocoa, it's high in heart-healthy flavinols. Much better for you than the alkali-processed stuff or the sugar-sweetened stuff. I wish they would provide some info on the flavinol content. I bought it at Shaws in the international department (the area with the hardwood flooring and higher prices). Beware: Inexplicably, there is another product with the same name and same brand in a darker blue label that is alkali processed. Alkali processing destroys a lot of the heart-healthy flavinols. This one is not described as alkali-processed. There is a warning on the label of this that it is processed in a plant that also processes soy, wheat, dairy and eggs. I am extremely allergic to eggs and react instantly when exposed to even minute amounts. I have no problem with this product, so I guess they wash the machinery well before processing the cocoa.
